Southwestern Chopped Salad

June 5, 2015 by Kaly

RTO Southwestern Chopped Salad 1I love this salad! It’s filled with all kinds of tasty, healthy, goodness and it is so easy to make! It’s my go-to when I want a quick, easy salad that will also fill me up. Normally salads are a side dish in my world, but this one takes the plate! (Or rather, bowl in this case.)

First up, gathering all those colorful ingredients.

Then, it is a chopped salad – so start chopping. Bite size pieces are perfect.
RTO Southwestern Chopped Salad 2Pour into a bowl with a cup or two of your favorite greens. For an extra protein boost, add some shredded chicken. (Or, if you’re feeling a little fiesta coming on, omit the greens and just dip some chips into the mix!) RTO Southwestern Chopped Salad 9

Made this for dinner tonight and it was delicious! I added French bread. It is perfect for Sacramento’s hot summer days.
