Very Vanilla Bean Ice Cream

Rich and creamy Very Vanilla Ice Cream with an easy egg custard base.
Ingredients
  • 1 Cup Whole Milk
  • 2 Cups Heavy Cream
  • ⅔ Cup Sugar
  • ½ teaspoon salt
  • 1 Tablespoon Vanilla Paste
  • 8 Egg Yolks
Instructions
  1. Lightly Mix Eggs in a separate bowl.
  2. Mix in saucepan - Cream, milk, sugar, and salt.
  3. Cook for 2-3 Minutes on medium to low heat until sugar is dissolved.
  4. Add vanilla and stir to incorporate.
  5. Take out about ⅓-1/2 cup of warmed mixture and add to eggs while stirring. (to raise egg temp)
  6. Add egg mixture into pan and cook 5-15 minutes on medium to low heat (stirring the whole time)
  7. Test doneness by making a solid line down the spatula that doesn't blur or slide off.
  8. Strain as soon as possible or there will be lots of lumps.
  9. Cool to room temperature.
  10. Put into fridge for 4+ Hours, or until pudding consistency.
  11. Pour into Ice Cream Machine and turn until soft Serve Consistency.
  12. Enjoy! (Or freeze to make firmer and save it for later!)
